碩士 === 國立東華大學 === 自然資源與環境學系 === 100 === Promoting environmental education is in urgent need because of the environmental imbalances in modern times. In the college, to provide students the underlying values of the environment through general education has become an important subject in environmental education. This study is based on exploring "Campus Green Kitchen," one general course at National Dong Hwa University. During the course, the researcher observed that the instructor had applied various experience-oriented interactive curricula, which differ from the conventional indoor curricula, setting the conditions to help students clarify and construct the foundation of environmental education and food & agriculture education. The researcher engaged in the teaching scene as a participant-observer to collect relevant materials for data analysis. Meanwhile, the researcher connected the class learning to life experience by exploring childhood and culture background of one's own, to understand the past, present, and future possibilities of environmental education as well as food & agriculture education. According to the data, the researcher found that gaining field experience of the practice of green life cycle and listening to farmers' life stories led students to get closer to nature and family. It shows that through the "Campus Green Kitchen" curriculum, the seed of environmental awareness have been sowed in mind because students identified with the instructor’s philosophy of life and dietary habits.
