Experiment can be divided into five steps. First of all, five varieties of soybeans for comparing experiment which was from Tainan Extension Station Council of Agriculture. The highest GABA content of germination soybeans were selected for follow-up experiments. The second part of the experiment was to select the optimal pH value of soybean germination. The experiment is devised with One Factor Response Surface Design. The range of pH value was 2 to 6. The third, optimal time of soaking organic acids solution was investigated. Same as the optimal pH value test, optimal soaking time test was also performed by one factor RSM. The range of soaking time was from 2 hours to 18 hours. Forth, the optimal ratio of organic acids complex in culture solution was tested. Regression equation was applied in optimal ratio of organic acid experiment. Finally, compared to control group, the above experiment conditions were mixed to find out the optimal treatment, The results turns out that Tainan Selection No.1 is the highest GABA content of germination soybean variety. The GABA content of germinating soybeans was 1.96 mg/g d.b.. The optimal pH value was pH 4.80, And the GABA content of soybeans was 2.00 mg/g d.b.. After two days of germination, the optimal soaking time was 10.81 hours. With these conditions, GABA content of germination soybeans was 3.46 mg/g d.b. Further, Combined acid, acetic acid, citric acid, and lactic acid were with batter enhancement of GABA content than organic acid . Sum up with the results, the optimal treatments of germinating soybeans GABA content was 4.26 ± 0.27 mg/g d.b.. Although it was lower than expected, it was still close to predicted value. GABA content of germination soybean control group were 1.88 ± 0.30 mg/g d.b.. It turns out that the optimal group of GABA content was 2.26 times than control group.
