| Summary: | 碩士 === 中華科技大學 === 機電光工程研究所碩士班 === 99 === Polarized light has many applications. As in this thesis, we studied the new applications of using the principle of the polarized light. First, a microscope of polarized light was made to monitor the potato Maltese cross and gelatinization since they change with temperature. Five experiments were compared for which could have the best results. Since the required experimental apparatuses are relatively simple, the method could be a good and simple way to view the Maltese cross.
