The principle of eating would be “eating healthy food in breakfast, eating full in lunch and eating little in dinner”. The children are the future of the country. To provide all kinds of nutrient and correct eating habit is very important for children during their developmental period. Therefore, to provide students a high quality lunch in school is especially important. For the lacking of standard protocols in the process of choosing school-lunch caterer, it is often questioned about what a proper and good ranking protocol should be. Therefore the purpose of this study is to establish a reasonable ranking protocol of school-lunch caterer. Firstly the criteria and sub-criteria of evaluation were chosen based on the current literature. Then these criteria and sub-criteria are confirmed by Delphi method. Furthermore, analytical hierarchy process (AHP) is used to deal with complex problem systemically through decomposing the problem into a hierarchy of more easily comprehended sub-problems. Each criterion and sub-criterion of hierarchy is given a numerical weight or priority for further judgment and analysis. In the final step of this process, the numerical priorities of these evaluation criteria and sub-criteria are calculated and converted to numerical values. In this study, according to the literature, we selected the four levels, five criteria and 26 sub-criteria which were further confirmed in the questionnaire for a panel of experts by using Delphi method and then further by using AHP to survey. In the conclusion of this study, the numerical weights of the five criteria are summarized as: 1. 31% for type of company, 2. 30.2% for management proposal of lunch, 3. 17.4% for ability of crisis management, 4. 14.2% for scene operation, 5. 7.3% for management concept. To establish the reasonable ranking protocol of school-lunch caterer, the school should better follow the result of this study to give the major numerical weight to these five criteria and then give the minor numerical weight to the selected 26 sub-criteria. It would provide the higher quality, fresher, more nutrient, safer and cleaner school lunch to students-the future of the country.
