Statistical analyses in-cluding descriptive statistics, t-tests, one-way ANOVA, and multiple regression analyses were used to test the hypotheses using SPSS12.0.The results are summarized as followings: 1. The university students obtained information related to night markets mainly from their friends and relatives, and the internet was the second. 2. The three highest scores of practical situation of night markets were selecting behavior, social cognition and hygiene cognition, respectively. 3. Gender difference, dietary courses taken and consumer budgets on Hygiene cognition have significant differences. 4. Gender difference on food selecting behavior has significant difference 5. Gender difference and degree of being familiar with night market on participation behav-ior have significant differences. 6. There is a significant relationship between mouthfeel cognition and dietary behavior, be-tween hygiene cognition and participation behavior, between social cognition and food selecting behavior as well as between social cognition and participation behavior. 7. The results from multiple regressions showed that three factors could predict dietary be-havior of university students at night markets.
