Citrus fruits peel contained rich flavonoids, but peel is not edible. Pith between peel and pulp contained rich fiber. The composition and biological activities of the peel fiber was never investigated. In this study, 70% ethanol extract of the peel and pith of Ponkan and Liucheng were used for determining the biological activities and antiinflammation. Results showed that ethanol extract of fruit peel and pith both exhibited antioxidation. In addition, pith inhibited COX-2 protein expression on LPS-induced macrophages (RAW264.7).
