The results are shown as the following: 1. To treat the MMPs with the sample that concentration was in 1g/mL. It revealed the great inhibition of MMPs activity(MW about 72kDa) after 24 hours. 2. Paper disc diffusion tests in microorganisms, we found that the concentration of sample was in 1g/mL, it was efficent to the inhibit the growth of B. subtilis (inhibitory zone 11mm) and Staphylococcus aureus bacteria (10.8mm), then no inhibitory ability in Escherichia coli, Pseudomonas aeruginosa, and Candida albicans. 3. To determinate the ability of keeping moisture, the experiments of moisture absorption and water retention were proceeded at 33%, 55%, 77%, and 90% relative humidity, respectively. The results showed that the ferment liquid of rice vinegar could increase 1.75% of moisture absorption rate on 24 hour at 90% relative humidity that the concentration of ferment liquid was in 1g/mL. The ferment liquid also enhanced 0.25% of moisture absorption rate on 24 hour at 77% relative humidity. However, function of water retention in this study was not found. 4. In anti-oxidation, this study showed five results of scavenging free radical including the DPPH, total anti-oxidant capacity of TEAC, inhibition of lipid peroxidation, reducing power, and ferrous ion chelating ability. We found that the concentration of ferment liquid of rice vinegar was in 10mg/mL showing 80% eliminating rate on DPPH free radical and the concentration of the sample was in 1.4mg/mL equivalent of 33.12μM total anti-oxidant capacity of TEAC then it displayed only 9.7% for chelating of ferrous ion that the concentration of the sample was in 1mg/mL. According to the experimental results, the ferment liquid of rice vinegar can be used as the new materials of cosmetic science. It exhibits the function of moisture absorption, the inhibitory of matrix metalloproteinase and anti-oxidative effect.
