In order to determine these factors, a model for prediction of temperature and these moisture content is very useful. Therefore, a thin-layer drying model conducted by math methods and statistical regression analysis is developed in this study. The measure temperature in solid state fermentation was compared with predicted temperature by the second order heat transfer differential equation. Three type of thin-layer equations were validated by a statistical regression technique. Residual plots were used as criteria for evaluating the fitting agreement. The important drying coefficients of these functions are quantified as constant values in the temperature range of 23-28℃ and the relative humidities range from 73-90%.
