The use of wine between ancient time and modern society are so different. In ancient time, wine had been mainly used for not only offering sacrifices to gods or ancestors but medical treatment. In modern society, it is used in daily life and entertainment. Starting from sorting the origin and development of Chinese Wine, this study focuses on the medical records and meanings of wine ever demonstrated in Chinese history. We found out that the application of wine in traditional Chinese medication history over thousands of years had resolved many illness problems in a unique and effective way. In western medicine history, they especially expertize in scientific analysis and know more precisely in components and pharmacology of wine. Besides, the key principle of wine drinking is the concept of “adequate”. However, modern medication still does not have an ubiquitous definition for it. Now, there is finally a general standard: “no more than two standard glasses a day”. By following the way of health preservation and avoiding the taboo of drinking we can benefit and make our bodies healthier. At present, there are two major systems of wine developing in Yi-lan. Yi-lan Distillery has been established for a hundred years in Lan Yang Plain. Its main products are Hon Lu Wine and Old Red Wine which are brewed from Monascus Anka. Other famous and popular featured wines are Classic Kin Chow Wine, Chin Shang Wine, Soup Cooking Chiew and Yuchan Sweet Osmanthus …etc. And, King Car Whisky Distillery has developed a native Taiwan whisky called “KAVALAN Whisky”.
