On the spot of farming, farmers utilize finite labor to produce and classify their products but do not know how to have a fair price in front of the market dealers. Inadequate coordination between production and sale leads to agricultural products unclassified in the markets and as a result the problem of imbalanced price. Upon the change of meaning and value of the subject products transited from farms to markets, this study tries to clarify the connection between market system, price and value of agricultural products then brings up different viewpoints of the value of demand for agricultural products. Looking backward the relationship between agricultural product price and market system, this study inserts the existing scenario of producing and pricing of the subject products into the agriculture history of Taiwan, and tries to learn the change of price on the basis of such axis. And on the basis of the Need-hierarchy Theory of Abraham Harold Maslow (1908 – 1970), this study compares the motives of the demand for agricultural products and tries to lift the status of those products by redefining the meaning of them then identifies their value beyond the price. From a cultural standpoint, this study assumes agricultural products as a medium, collects local knowledge via field research, and reinterprets the diverse relationship between producing, pricing and valuing of the products in order to furnish agricultural products a brand new social meaning.
