Two hundreds and eighty-seven type 2 DM patients were recruited from a regional hospital in Miaoli County, Taiwan. A validated questionnaire was used to evaluate the stages of dietary fiber intake, nutritional knowledge, attitudes and dietary behaviors. Patients’ nutritional knowledge, attitudes and dietary behaviors were highly correlated with stages of change on dietary fiber intakes. Type 2 DM patients at action or maintenance stages had better diabetic nutritional knowledge, attitudes, dietary behavior scores and serum high density lipoprotein-cholesterol concentration than those who at precontemplation or contemplation stages. Patients received more dietary counseltations tended to be at action and maintenance stages of dietary fiber intakes. Dietary counseltation was required to significantly improve patients’ DM nutritional knowledge, attitudes and dietary behaviors.
