Summary: | 碩士 === 中山醫學大學 === 營養學研究所 === 95 === This study was to investigate the effect of Taiwanese Agaricus bisporus intake of different concentrations on glycaemic control, anti-inflammation and antioxidant capacity in mice. Agaricus bisporus powder at 10% and 20% were added into the diet for 1 month. Mice were treated with lipopolysaccharide to induce oxidative stress. Results showed that the intake of Agaricus bisporus significantly rose glucose level and liver glucose-6-phosphatase activity but significantly reduced lactate dehydrogenase activity , fibronectin and tumor necrosis factor-alpha levels in serum (p<0.05). These supplements significantly increased liver catalase activity and decreased lipid oxidation (p<0.05). The administration of both 10% and 20% Agaricus bisporus significantly increased glutathione peroxidase (GPx) activity and glutathione (GSH) level (p<0.05) in serum. However, only 20% Agaricus bisporus treatment significantly increased GPx activity and GSH level (p<0.05) in liver. The administration of both 10% and 20% Agaricus bisporus significantly increased superoxide dismutase (SOD) activity (p<0.05) in serum and liver. These data suggest that the Agaricus bisporus intake could maintain glucose homeostasis, decrease inflammation status, and enhance antioxidant protection.
