Accommodation should be a space safety, healthy and comfortable (WHO, 2005). Hence, hotel management plays an important role for travelers’ health, safety & security and welfare. It is essential for hotel management to do some precautionary measures. Environmental protection is the trend, with the establishment of international Standards for Environmental Management i.e., EMS, ISO 14001, tourism and hotel industry world-wide is taking advantage of implementing these standards that are comparable across the world. Environmental auditing is one technique that can be used by the tourism industry to evaluate the environment consequences of its activities and determine how its operations measure up against legislation and standards. Although some environmental auditing studies within tourism industry have been implemented, little study within hotel industry is concerned about health and safety & security issues for their guests. Hence, the purposes of this paper are to investigate the topic of environmental auditing within hospitality and develop the evaluation systems for environmental auditing combination with health and safety issues. This approach is based on the indicator system, and then the Delphi Method is employed to collect experts’ opinions.
