This study was conducted by the convenience sampling. The survey sent 460 copies of questionnaires and the effective samplings are 403 copies with 96.9% retrieving rate. All data were analyzed with the following statistical methods such as item analysis, factor analysis, reliability analysis, frequency distribution, descriptive statistics, independent samples t test, one-way ANOVA, Scheffé''s method, and Pearson''s coefficient correlation. The results of this research are as fellows: (1)Vocational maturity (Mean = 3.37, 67.4%) and Career development (Mean = 3.95, 79%) are close to the middle upper degree. (2)The different personal attributes of graduating students have significant differences in vocational maturity. (3)The different personal attributes of graduating students have significant differences in career development. (4)The different family backgrounds of graduating students have significant differences in vocational maturity. (5)The different family backgrounds of graduating students have significant differences in career development. (6)In relation to vocational maturity and career development, ''the professional attitude'' and other items show negative correlation. However, the majority present the positive correlation in different degrees among each other. By understanding the current situation of vocational high school education and the areas to be strengthened, the results of this research will benefit both governmental education authorities and industry practitioners in decision making on human resources strategy in food Service industry.
