Cooperating with 「2003/2004 Taiwan Total Diet Study」, 12 leafy vegetables have been sampled. A total of 144 samples coming from 8 places including north, center, south, east of Taiwan are sampled by 4 seasons. They are processed as food through the standard operational processes of washing, cooking and so on. After the application of multi-pesticide residue analysis of processed leafy vegetables, which has been built to detect about 150 pesticide residues in this research, the result indicate that there are 19 pesticide residues detected. Carbendazim and Profenofos are detected with the highest percentage of 22.9%. One thing to note is that Monocrotophos, Oxadiazon, Triazophos are not recommended as the usage of leafy vegetables in Taiwan. Insecticides cause the major pesticide residues of the samples, and organophosphate was the most common one. As for safety assessment of deit, the actual residue contribution (ARC) of Prothiofos takes on the highest percnetage of its acceptable daily intake (ADI) in Taiwan, with 18.8%. Secondly, the ARC of Carbofuran is 8.99% of its ADI, and that of the other 17 pesticides are all below 1% of their ADIs. As 5 detected pesticides are potentially carcinogenic, which are EBDC’s, Oxadiazon, Acephate, Cypermethrin, Permethrin respectively, their dietary oncogenic risks (DOR) needed to be calculated. About different vegetables, the estimation has shown that total DORs of eating wash spinach is the highest, leaf mustard as secondary, and the DOR of green onion samples is zero. In the viewpoint of different groups of pesticides, there are three groups including insecticide, herbicide and fungicide.
