Summary:碩士 === 國立屏東科技大學 === 畜產系 === 93 === The purpose of this study was to investigate the expression on carcass characteristics and meat qualities of Duroc-sired offspring pigs which came from the terminal boars with heart fatty acid binding protein gene (H-FABP) markered HH6 and halothane gene free (HGF). The candidate terminal boars were selected from 3 pig-breeding farms. The blood of the boars were drawed and examined, then only those boars which were with H-FABP marked HH6 genotype and HGF NN genotypes were finally selected as the terminal boars that applied in this study. After mating with the sows either of Landrace (L), Yorkshire (Y) or hybrid (LY) obtained from the other 9 pig farms, the offsprings were detected for the H-FABP gene and HGF and 291 heads with live weight approximately 120 kg were randomly selected to slaughter. The carcass characteristics, meat qualities, proximate analysis, fatty acid and amino acid composition were then determined. The results showed that among breeds, LD pigs had a lower dressing percentage; LYD pigs revealed lighter carcass weights and high shear values; YD pigs had thicker backfat thickness, lower lean percentage and higher a-values. When considering genders, hogs had higher backfat thickness, fat percentage, marbling scores, cooking losses and intramuscular fat and gilts had longer carcass lengths, larger loin eye areas, higher lean percentage and crude protein contents. When considering weight, pigs with live weights more than 141 kg had longer carcass lengths, higher backfat thickness and fat percentage, and lower lean percentage; body weight between 90-100 kg had smaller loin eye areas. When considering pigs with HGF NN genotype and H-FABP genotype, pigs with HGF NN genotype (negative) had longer carcass length, halothane nn genotype (positive) had higher dressing percentage and L-values, less carcass weights, lower color scores and fat percentage; H-FABP genotype had no significant influence on carcass characteristics and meat qualities.
