Summary: | 碩士 === 靜宜大學 === 食品營養研究所 === 92 === The purpose of this study was to evaluate the effect of pre-germinated brown rice on serum cholesterol and blood sugar concentration in diabetic patients. Subjects who had serum fasting blood sugar level between 110~200mg/dl、HbA1c higher than 6.0% and serum cholesterol concentration higher than 200mg/dl were included in this study. Subjects were randomly divided into two groups of A (n=6) and B (n=5). In the first stage , we gave the group A white rice ; group B germinated brown rice instead of daily rice. In the second stage , we gave the group A germinated brown rice ; group B white rice instead of daily rice. Each stage was six weeks. Washout period was two weeks. During the experiment measuring the amount of their dietary calories and the verity of anthropometric along with their dietary survey included three-days dietary record. In addition , we measured blood biochemistry of subjects at 0th、6th、8th、14th and 16th week.
In result, there were no significant different of dietary intake and anthropometric measurement between two groups after experiment. In the first stage , the serum cholesterol、triglyceride、fasting blood sugar concentration and HbA1c of subjects in group B was significantly decreased ;high-density lipoprotein was significantly increased after treatment .In the second stage ,the serum cholesterol、triglyceride、fasting blood sugar concentration and HbA1c of subjects in group B was significantly decreased after treatment .
Combined with those points demonstrated above, we can concluded that pre-germinated brown rice could significantly decreased blood sugar and serum lipid of diabetic patients so that it could delay the complication period from occurring.
