Leaves, stems and roots were studied by UV/visible spectrometer, respectively. .The spinach leaves together with stems and roots were cultured in the Na2SO3 solution of concentration(0.05、0.1、0.2M) for 24 hr, the concentration percentages of GSH and polypeptides were that the leaf on T-SH are 103%, 166%, 500% rat water. The stem on T-SH are862%, 1229%, 1481% rate water. The roots on T-SH are 46%, 37%, 112% rate water. The leaves on W-SH are 119%, 184%, 700% rating water. The stems on W-SH are 753%, 1192%, 1376% rating water. The roots on W-SH are 14%, 7%, 71% rating water. In the Na2SO4 solution of concentration(0.05、0.1、0.2M), the concentration percentages of GSH and polypeptides were that the leaf on T-SH are 103%, 119%, 170% rat water. The stems on T-SH are 141%, 148%, 159% rat water. The roots on T-SH are 236%, 321%, 339% rate water. The leaves on W-SH are 106%, 111%, 137% rating water. The stems on W-SH are 200%, 208%, 233% rating water. The roots on W-SH are 140%, 148%, 159% rating water. In the Na2CrO4 solution of concentration(0.05、0.1、0.2M), the concentration percentages of GSH and polypeptides were that the leaves on T-SH are 931%, 952%, 1000% rating water. The stems on T-SH are 392%, 1310%, 2162% rating water. The roots on T-SH are 588%,1235%, 1529% rate water The leaves on W-SH are 860%, 900%, 910% rating water. The stems on W-SH are 462%, 731%, 1824% rating water. The roots on W-SH are 470%,1117%, 1470% rating water. In the mixture of sodium chromate (0.05、0.1、0.2M) and fixed concentration of sodium sulfite (0.05M), the concentration percentages of GSH and polypeptides were that the leaves on T-SH is 263%, 287%, 304% rating water. The stem on T-SH is 868%, 1929%, 2384% rating water. The root on T-SH is 157%, 210%, 393% rating water. The leaves on W-SH are 334%, 453%, 708% rating water. The stems on W-SH are 306%, 979%, 1541% rating water The roots on W-SH are 190%, 233%, 546% rating water. So we known the concentration percentages of W-SH, T-SH on the levels of GSH, increased linearly with the increase of concentration of sulfate, chromate and mixtures of these two components up to 0.1M.
