The origin of Taiwnan''s catering industries come from any variety of manners and common environment in life. The back meanings stand for the boom and recession and indicate the food characters under the development in Taiwan''s industries. Today, there are more and more restaurant industries providing for the catering service to expand the market, forming the great competitive with the traditional industries. How do Taiwan’s catering industries that the mutual relationships between economy and society make a strategic development to correspond to the social change under the effect of the material civilization? Taiwan’s traditional catering industries provide for the introspection whether traditional industries live with the modern economy. The purpose of this research was to explore the strategy development for Taiwan’s catering industry-Banzhuo, which focus on the external “Overall Environment on industries”, “Competitive Environment on industries” and internal “Framework Analysis on industries” The study uses “ In-depth interview survey”, which celebrating three chefs for from “Foundation of Chinese Dietary Culture”, including on north, middle and south region of Taiwan. Aged between fifty and seventy, with over thirty-year working experience. In-depth interview and participant observation was the principal method used in collecting data, which were later transcribed into written script. Grounded theory principles and methods for data analysis were applied in phenomenology and hermeneutics themes from the interview data. The major findings of the research were follows: 1. In terms of the overall environment, the Taiwan’s catering industries were the major industries on early farm society, owning courtesy and sensibilities and the (Non- negative provision) characteristics. These characters make the social, culture, and high environment effect more than low sharp economic environment and political environment. 2. In terms of the competitive environment, the Taiwan’s catering industries correspond to the internal industries and the characters of industries are specific. Therefore, new competitors of five-forces industry analysis were one of great threat and different predicament. 3. In terms of the internal framework within industries, the Taiwan’s traditional catering industries focus on producing menu and selling on word of mouths marketing. The human management uses the temporary employment system. The developments on studies separate software and hardware into opening up. The financial management corresponds to the weak level.
