Summary: | 碩士 === 長庚大學 === 化工與材料工程研究所 === 92 === The influences of impurities on the growth kinetics of sucrose crystals in aqueous solutions are studied using a photomicroscopic technique in an isothermal, continuous-flow chamber. The phenomena of size-independent growth and growth rate dispersion are all observed in the experiments. These results indicate that the constant crystal growth model is applicable in the studied crystallization system.
Impurities, including fructose, invert sugar and CaCl2, are added to sucrose solutions at various impurity/water ratios (I/W). The results show that, as the value of I/W for all impurities increases, the crystal growth rate decreases. Some empirical correlations are proposed to account for the inhibited growth rate in the presence of the impurities. The parameters in these correlations are determined by minimizing the sum of the squared residuals.
