S. Cheng 鄭德善 碩士 國立屏東科技大學 機械工程系 91 This research used a low-temperature and low-humidity dryer as the main facility to dry Ficus Awkeotsang Makino. The experiment material was Ficus Awkeotsang Makino provided by Mr. Li in Neibu . The experiment was intended to find out the property of drying Ficus Awkeotsang Makino. The dryer included one compressor, two sets of evaporators, two set of condensers, one axial-flow fan, and one controller. The experiment used sun-dry method to dry Ficus Awkeotsang Makino at temperatures of 30℃,35℃and 40℃. The temperature was measured at 16-point position in the drying room and the wind velocity of upper, middle and lower level were recorded during the fest. The water content of Ficus Awkeotsang Makino after drying was 13%. The physical property analysis and chemical analysis were conducted to test the pressure, electric conduction, crude protein, pectin, and color of Ficus Awkeotsang Makino. The Ficus Awkeotsang Makino purchased from merchants and sun-dry Ficus Awkeotsang Makino were washed out their pectin, and was used as the index to compare the experimental results in order to find out the best drying temperature for Ficus Awkeotsang Makino. The results showed that the temperature of the dyer could be kept within 1℃ of difference and the fruit could be carried uniformly , the drying time could be three to four days less than the sun-dry method. and The result showed that the awkeo-jelly formed from Ficus Awkeotsang Makino dried at 30℃ was very similar to the ones purchased from merchants and dried with sundry method. Therefore, drying temperature of 30℃was the most appropriate. 謝欽城 2003 學位論文 ; thesis 98 zh-TW
