Roselle, full of anthocyanin, is a good source of natural pigment and powerful antioxidant. Many medical reports indicate that anthocyanin and polyphenols can inhibit inflammation and possess bacteriostatic ability. In this study, we use the roselle tea as material and try to ellucidate its effect on the health of long term foley elderly. The data showed that, composition of the roselle tea include total soluble solid 1 % , total phenol 7.32 mg /100 ml , anthocyanin 10.65 mg /100 ml and malic acid 0.59 g/ 100 ml. pH value and DPPH scavenging effect were 2.44 and 40.55 % respectively. Study object include hospital, retirement home and control groups. The amount of roselle tea taken was 300 ml per day and last for 8 month. Results showed that, for hospital and retirement group, the pH value and bacteria in urine were decreased significantly ( pH value from 7.9 to 5.6 and bacterial number from 3+ to trace ). while there is no change in control group. It suggested that, the decrease of the pH value in urine benefit the inhibition of bacteria population. As to blood biochemistry, triglyceride decreased significantly from 147.4 mg / dl to 98.0 mg / dl ( 34 % ) in hospital group, while in retirement home and control group were 53.2 % and 4 % only respectively. For cholesterol, hospital group decreased significantly from 245.1 mg / dl to 148.0 mg/dl ( 38 % ) , while in retirement home and control group were 30 % and 1 % only respectively. Blood sugar decreased significantly 35 % and 51 % in hospital group and retirement home respectively, while in control group 1 % only. After 8 month, the systolic pressure changed from 168 mmHg, 172 mmHg, 184 mmHg to 140 mmHg, 159 mmHg, 181 mmHg, in hospital, retirement home and control groups respectively, while there is not much change in diastolic pressure for all groups. It came to concluded that, 8 month intake of roselle tea has positive effect in decreasing triglyceride, cholesterol, blood sugar and blood pressure. Owing to the antioxidant capacity and low cost of roselle in Taiwan, it is worthy to be recommended in the daily diet for all the people.
