However, the hulls of soybean contain isoflavones have been discarded. Thus, the antioxidant activity of soybean hulls was investigated for the possible application in this study. Firstly, the objective of this study was to identify the antioxidant activity of Anoetochilus formosanus and soybean hulls, which were extracted with the various solvents (water, ethanol and hexane) and various extraction methods including homogenizing, shaking and soxhlet extraction. Results show that water and ethanolic extractsof Anoetochilus formosanus by shaking had the highest ability to scavenge DPPH (69.79% scavenging effect at 10 mg/ml) and had the most contents of total phenol (63.2mg of GAE/g dw), respectively. Meanwhile, the best extract of soybean hulls to scavenge DPPH was extracted by soxhlet (62.37% scavenging effect at 10 mg/ml). Secondly, ethanolic extracts of Anoetochilus formosanus (500 and 1000 mg/kg/day) were daily given by gavage to the ovariectomized Spraque-Dawley rats on eleven consecutive weeks to elucidate the osteoporosis effect of Anoetochilus formosanus. Results showed that Anoetochilus formosanus markedly increased body weights of rats but did not affect bone density of rats. Finally, the objectives of this study were to investigate the physicochemical changes of ethanolic extracts from soybean hulls during membrane process. Retentate and permeate were obtained after filtering through five different membrane (0.45μm, UK-200, UK-50, UP-200, UK-10) and reached various volumne concentrate ratios (VCR) such as 1.5, 2.0, 3.0 and 4.0 at the pressure of nitrogen (5kg/cm3). Result showed that the flux was the fast and slowest when treated with 0.45μm and UK-50 membranes, respectively. Membrane processing such as UK-10 and UP-200 increased the clarification of permeate. However, the contents of total phenols, flavonoids and isoflavones and the abilities of DPPH scavenging and reducing power of retentate increased with increasing VCR. 碩士 === 國立嘉義大學 === 食品科學系碩士班 === 91 === Abstract
Anoetochilus formosanus is a famous folk-medicine in Taiwan. Many studies demonstrated that the water extract of Anoetochilus formosanus can decrease blood pressure, anti-irritation and protect liver. Methanolic extract from Anoetochilus formosanus was shown to decrease blood sugar. The antioxidant activities of isoflavones from soybean have shown to benefit health.
