Summary: | 碩士 === 國立臺灣師範大學 === 家政教育研究所 === 89 === The purpose of this study was to access the effect of the reducing fat intake nutrition education program including children and parents’ education on 5th graders. Two elementary schools in Da-An district of Taipei city participated in this study. The children of experimental group (N=53) were treated with eight-session classroom nutrition education program-one session per week. And their parents’ nutrition education included four newsletters and one seminar. The control group (N=59) was not treated with any educational intervention. The effectiveness of the program was evaluated by assessing children’s reducing fat intake nutrition knowledge, nutrition attitude, dietary behavior and self-efficacy one week (posttest) and six weeks (follow-up test) after completion of the intervention. The results indicated that: (1) The program significantly improved children’s reducing fat intake nutrition knowledge, nutrition attitude, dietary behavior and self-efficacy, and the effect lasted at least six weeks. (2) The program was effective despite of children’s sex, academic achievement, BMI and family social economic status, but not children with low degree of parents’ involvement. (3) Children’s academic achievement could predict their reducing fat intake nutrition knowledge, and nutrition knowledge could predict nutrition attitude, and thereafter self-efficacy and dietary behavior. The results supported the feasibility and importance of parental involvement in the children’s nutrition education program.
