From April to December in 2000, we selected sixty different meal-box suppliers in kaoshiung county as the samples including ten meal-box factories, twenty-two buffets, eight school lunch suppliers and twenty school packaged food producers then separated them into two group in random. One is the control group accepting only the evaluation on sanitation self-control (The evaluated standards are : grading the sanitation self-control on the factories, inspecting the cleanness of the production-line circumstance and the number of the microorganisms in meal-box foods) but no guidance. The other one is the guided group accepted not only the evaluation, the guidance but the ways of grading meal-box suppliers made from the Health Bureau according to the Department of Health.com.tw.ROC with the inspected chart and items, contents of the meal-checked chart to do the self-control guidance. We screened thirteen conscientious, professional inspectors from twenty-seven and picked five having the same standards for grade to proceed this evaluation and the guidance. From April to July, we did the first check, in July and August, we proceeded with the guidance, and from September to December, we did the second check. By grading the sanitation self-control on the suppliers, the cleanness of the production line and the number of the microorganisms in meal-box foods, we can evaluate how it works. We used EXCEL to collect the data and SPSS 8.0 software to analysis them. Before guiding, the unqualified rate among the sanitation self-control on the suppliers, the cleanness of the production line and the number of the microorganisms in meal-box foods is higher, there is insignificant statistically difference between the unguided and the guided groups. After assisting, the control group had insignificant difference in the above mentioned evaluation index; the guided group, the inspected unqualified rate of the microorganisms descended 20 percent, but the statistical result among the sanitation self-control on the suppliers, the cleanness of the production line and the number of the microorganisms in meal-box foods is still insignificant, however the outcome of the sanitation self-control graded by the paired-t test had significant difference ( p<0.05). After guiding, the average improved scores are 6.97, and the meal-box factories got 21.4 scores which made a great progress. This shows that after guiding, the sanitation self-control on the suppliers has great improvement, especially in "packaged room" and "members" these two items. After guiding, the progress reaches to significant statistically difference( p<0.05). The sanitarian units should guide the meal-box suppliers with the sanitation self-control initiatively, and demanding to carry out the HACCP system and put GHP into practice to let the suppliers control the sanitation of the materials and process of making meal-box automatically to achieve the high quality in the source and the duty of products. Although practicing this will make the positive influence on them, the best way is that they should control themselves spontaneously.
