Therefore, lowering blood lipids is the first step to avoid the occurrence of cardiovascular and cerebral vascular diseases. The purpose of this research was to investigate the effect of high and low molecular weight chitosan, hawthorn and both of high molecular weight chitosan and hawthorn on blood lipids and degree of lipid peroxidation, plasma vitamin E and immunity. Fifty-six hyperlipidemia patients were randomly divided into four groups:high molecular weight of chitosan group (CH1 group), hawthorn group (HAW group), both hawthorn and high molecular weight of chitosan group (MIX group), and low molecular weight of chitosan group (CH2 group). Venous blood samples were collected to determine the blood lipids ( plasma total cholesterol, triglyceride, high density lipoprotein-cholesterol and low density lipoprotein-cholesterol), lipid hydroperoxide of low density lipoprotein and thiobarbituric acid reactive substances(TBARS), plasma vitamin E and immunity(total lymphocyte, B-lymphocyte and T-lymphocyte count) every two weeks. The 24-hour dietary recall method was used to obtain supplementary information for evaluation. Results of blood lipids and lipid hydroperoxide in CH1 group showed improvement but not significant difference, and TBARS was decreased significantly (p<0.05). Total cholesterol, low density lipoprotein-cholesterol and lipid hydroperoxide in HAW group were decreased significantly (p<0.05), but no effect on TBARS. Total cholesterol, low density lipoprotein-cholesterol in MIX group were decreased significantly (p<0.05), but no effect on lipid hydroperoxide. TBARS and total cholesterol in CH2 group were increased significantly (p<0.05), and lipid hydroperoxide showed improvement but not significant difference. There was no significant difference on immunity and plasma vitamin E in four groups. Hip and waist-hip ratio in CH1 group were decreased significantly, and body weight and body mass index in HAW group were decreased significantly (p<0.05). Supplementation of high molecular weight chitosan can lower blood lipids, but no significance, and supplementation of low molecular weight chitosan can lower plasma total cholesterol significantly. Supplementation both of high molecular weight chitosan and hawthorn can lower total cholesterol and low density lipoprotein-cholesterol significantly, and supplementation of hawthorn has the same action. However, there was no effect on immunity and plasma vitamin E in all groups.
