Summary:碩士 === 中國文化大學 === 應用化學研究所 === 88 === Different concentrations of sodium sulfate and nitrate [0.1, 0.3 and 0.5M] and their mixtures [0.1, 0.3 and 0.5M] on the effects of biosynthesis of amino acids and glutathione [GSH] in spinach leaves together with stems were studied by high pressure liquid chromatography, respectively. The spinach leaves together with stems were cultured for 24 hours. The concentration percentages of GSH and polypeptides were approximately by 108, 208 and 329% under sodium sulfate, 113, 194 and 401% under sodium nitrate, and 174, 408 and 472% under equal mixtures of sodium sulfate and nitrate as compared with distilled water cultured, respectively. The concentration percentages of amino acids were approximately by 67, 76 and 980% under sodium sulfate,58, 75 and 1441% under sodium nitrate, and 62, 100 and 1748% under equal mixtures of sodium sulfate and nitrate as compared with distilled water cultured, respectively. From the above results showed that the levels of amino acids and GSH increased linearly with the increase of concentration of sulfate, nitrate and equal mixtures of these two components up to 0.5M. Deterioration of the spinach leaves were found under high salt concentration [0.5M] especially for sodium sulfate.
