A preintervention and postintervention questionnaire was administered to the participants. A lecture with hands on demonstrations and handouts were provided and included food safety, knife skills, kitchen equipment and utensils, and basic cooking skills. Following the lecture, the adolescents cooked the recipes planned for the cooking education class. Cooking self-efficacy, cooking skills and cooking knowledge was measured using dependent t tests. A total of nine foster adolescents participated in the study. The average age was 14.7 years old. Five were male (55.6%) and three were female (33.3%). The majority of the participants were White/Caucasian (66.7%) and 44.4% reported living with a foster family. The results determined that there were no significant differences in cooking self-efficacy, cooking skills, and cooking knowledge before and after participating in a cooking education class with the level of significance set at p = 0.05. There were no significant differences in the ability to complete a particular cooking class (p = 0.35) and the perceived level of difficulty of a particular cooking task (p = 0.49). Limitations included time and the number of participants. The foster adolescents had basic cooking skills, knowledge, and self-efficacy; however, behavior was not assessed during the study to determine whether they could demonstrate and practice these aspects in the kitchen. 2019-12-05 English text Kent State University / OhioLINK http://rave.ohiolink.edu/etdc/view?acc_num=kent1573218146438714 http://rave.ohiolink.edu/etdc/view?acc_num=kent1573218146438714 unrestricted This thesis or dissertation is protected by copyright: all rights reserved.
