Summary:The provision of additional mealtime food aroma (baked bread) to long-term care residents was researched as a non-intrusive method of improving quality of life factors including weight, appetite, enjoyment of life, well-being and depression. A questionnaire was used to assess the effects of the intervention on personal appearance, appetite, overall health benefits and quality of life. The background for the study originated with Yeh et al. (2000) who used a pharmacological drug as an intervention to improve quality of life factors. Results included a statistically significant improvement in well-being factors potentially related to the improvement in the built environment for residents, employees, family members and volunteers.
