Summary:Increasing the productivity of horticulture in the region in recent years in state of Sergipe, led to intense use of resources such as soil and water and had as a consequence of worsening the sustainability of these systems agroecosystems inserted production objective of this study was to evaluate the environmental sustainability units of vegetables, the main product of the rule of vegetables in state of Sergipe. Some researchers used a methodology used in this work for some years showing good results. In this case involved the work with ten farmers of which five are organic management systems in their establishments and five are conventional management systems. With this group of ten farmers were selected indicators of quality of cropping systems to be evaluated and were built it s their descriptors. Parallel took place in the characterization of the profile of farmers in the two cropping systems and its conflicts. The results show that the indicators used and the methodology applied to allow family farmers of state of Sergipe understand and diagnose changes in production units. The methodology allowed complies with the specific objectives of the dissertation, concerning the construction from the local knowledge indicators of environmental quality. The methodology has to evaluate the environmental sustainability of units vegetables in state of Sergipe and on the basis of this assessment, consider the future management of these properties and improving the sustainability of agroecosystems. To make an overall assessment of the sustainability of production systems under study, other studies are needed to deepen the research in the areas, economic and technical them. === O aumento da produtividade da olericultura nos últimos anos na região Agreste de Sergipe levou a utilização intensa dos recursos naturais como solo e água tendo como conseqüência a diminuição da sustentabilidade dos agroecossistemas inseridos nesses sistemas de produção. O objetivo deste trabalho foi caracterizar e avaliar a sustentabilidade ambiental da olericultura nos sistemas de produção convencionais e orgânicos no Agreste de Sergipe, principal zona produtora do Estado. A metodologia utilizada neste trabalho apresentou bons resultados e baseou-se em entrevistas semiestruturadas realizadas com dez agricultores familiares dos quais cinco desenvolvem sistemas de manejo convencional nos seus estabelecimentos e cinco desenvolvem sistemas de manejo orgânico levando em consideração parâmetros como caracterização do meio físico, formas de manejo, caracterização sócio-econômicas dos agricultores e prováveis impactos relacionados a atividades nas propriedades da região. Com esse grupo de dez agricultores foram elaborados os descritores nos dois sistemas de produção, onde posteriormente foram construídos indicadores ambientais. Os resultados obtidos demonstram que os indicadores utilizados e a metodologia aplicada permitem aos agricultores familiares do Agreste de Sergipe perceber e diagnosticar mudanças relacionadas à sustentabilidade nas unidades produtivas.
