This paper is based on a body of data from fieldwork conducted in France and the United States between 2014 and 2018. The objective of this paper is to analyze the trajectories of individuals practicing a raw food diet. It questions the motives behind such a commitment, revealing the intimate crises that these individuals go through. This paper describes the stages of the raw food experience and their social environment in time by presenting the modalities and the dispositions that are negotiated. The analysis of these life trajectories reveals a demand for self-realization and an ideal of authenticity towards which these individuals strive. This paper shows that food and health are privileged fields for observing an attempt to optimize the self as an expression of contemporary individualism.
