In order to have a properly understanding about this current research project, it is necessary to have a previous knowledge in engineering that has to do with control and thermodynamic. The mathematical modeling is divided in two different and indispensable processes involved in the development of a final product (panela): a) sugar concentration control and b) level control in the multiple effect evaporation system.
