The data was analysed to identify the quaternary ammonium moiety introduced onto the galactomannan chain. The correlation signal of carbon and hydrogen of quaternary ammonium groups introduced onto the galactomannan chain was observed at 56 and 2.7 ppm respectively in HSQC spectrum. Further, the rheological data of CTG and derivatized product has been discussed. The data is related to the research article “Synthesis and characterization of quaternized Cassia tora gum using Taguchi's L′16 approach” [1].
