Revealing non-conformities and finding out corrective actions for quality enhancement make up the necessary stage for the achievement of the major objective. For this purpose it would be useful to analyze the activity of the Ukrainian fat-and-oil company and find out the advantages of the foreign system implementation, proposing the implementation of the Hazard Analysis and Critical Control Points (HACCP) system, performing an expert review of a set of certain criteria for the company activity evaluation, determining the assessment parameters for every structural component of the system, using Polli-Cook technique for the determination of HACCP system life cycle phase, making administrative decisions targeted at the improvement of the system formation and development processes.http://www.ijqr.net/journal/v11-n4/9.pdfPolli-Cook modelindustrial policyfat-and-oil industryfood industryquality management systems
