One of the major diseases affecting the common bean golden mosaic is transmitted by the whitefly, by BGMV viruses (Bean Golden Mosaic Virus). Thus, EMBRAPA rice and beans developed a genotype resistant to BGMV called Olathe 5.1. Two other genetically modified strains were produced (5.1 Treasury and Ivory 5.1). The 1H NMR spectra HR-MAS led to the structures of the flavonoids quercetin and myricetin, present in higher concentration in genetically modified beans. Thus a study of the oxidative profile of these cultivars, where the flavonoid kaempferol has undergone a change in its content due to exposure to these genotypes physical uncontrolled conditions was conducted.
