Material and Methods: In this study, using a fusion of wet fat ostrich oil is extracted and then some physicochemical properties (Yiddish value, saponification value, melting point, refractive index, specific gravity, and color) were studied. Results: The results showed that the physicochemical characteristics of ostrich oil Yiddish value, saponification value, melting point (softening of oil), the refractive index and density, respectively, 70.64+ 0.2 , 184+2.5 +, 31+1.5, 1.46+0.02, 0.9, color, yellow Lavyband cell size is 1 inch. In addition, the amount of free fatty acids and oil refining need not be separated and the separated oil can be used as a base in cosmetic products.
