| Summary: | This research deals with the culinary system produced by the community of Azorean immigrants of São Paulo. It is methodologically based on Oral History, which allowed us to observe how (re)constructed dishes represent flavors of memory, ancestrally elaborated on the islands and ritualistically re-elaborated during holidays and savored by the immigrant community, their descendants and others. We observed how the gastronomic practices were developed on holidays, main dishes, ingredients, preparation, forms of presentation and what are the different values assigned to them by the group. |
