Heritage is becoming increasingly important in most contemporary societies, so what can explain its success? Although it is true that patrimonialization reveals the elaboration of rules and norms promoted by international institutions, showing a clearly universalistic ambition in terms of its uses and its implementation, it also reflects decisions, expectations, strategies and dynamics of both actors and local groups with varied and often divergent interests. The particular case of food heritage, and more precisely that of the “gastronomic routes” in Mexico, updates the contradictory challenges that are at stake regarding patrimonialization, as well as the narratives on which it is based. Beyond that, food heritage questions the relationship of societies with their history.
