Summary: | This study evaluated the physical-chemical and microbiological quality of integral and skimmed UHT milk of 5 different brands, according to the requirements of MERCOSUR. Proof of stability to alcohol 68% was held and titratable acidity in Dornic degrees, and count for total coliforms, thermotolerant coliforms and Escherichia coli and aerobic mesophilic. All samples were stable alcohol 68% and within the limits established by legislation to acidity. For coliform count all samples were negative, while for mesophilic aerobic 10% if found positive. |
