The results of investigation concerning the improvement of protective covering properties on the basis of sodium alginate, carboxymethyl cellulose and glycerin were shown using LAB Lactobacillus рlantarum ONU 12, the capacity of abovementioned LAB for survival and growth at the surface of meat as a component of packaging. The positive influence of created packaging on meat characteristics within all terms of handling is set and theoretically proved. According the results of experimental investigations the comparative test of using the packaging without and with LAB was made.
