The post-World War II technological progress has contributed to the development of a strong food industry, to the appearance of fast food and to the use of additives and emulsifiers. These factors have also acted on Moldovan food behaviour that has undergone changes due to the mobility of consumers abroad, to the lack of free time and to psychological frustrations.
